3 cups all purpose flour |
1/4 teaspoon salt |
1 cup butter |
1/4 cup sugar |
juice and grated rind of 1 lemon |
2 egg yolks, beaten |
1/4 cup cold water |

4-5 large apples, cored, pared and cut into eighths |
2/3 cup sugar |
3/4 teaspoon cinnamon |
1 egg yolk |
1/2 cup cream |
Directions:
1. Preheat oven to 400 F. 2. For the dough mix butter, flour and salt with fingertips until crumbly. Add sugar and mix lightly. 3. Combine lemon juice and rind, egg yolks, and water and add to flour mixture to form a dough. Chill. 4. After chilled pat dough into a large pan until about 1/4 inch thick. 5. Lay the apple slices in parallel rows on top of dough. 6. Mix sugar and cinnamon together and sprinkle on top of apples. 7. Beat egg yolk and cream together and drip over apples. 8. Bake 20-30 mins, or until crust is well baked and apples are soft. |
