This is a simple Latin influenced slaw that is a great side dish for summer grilling get togethers Ingredients:
1/2 cup fresh lime juice |
1/2 cup bottled apple juice |
2 tablespoons chile con limon powder |
* you may sub chili powder if you cannot find chie con limon |
3 tablespoons rice vinegar |
1 large or 2 red onion, julienned |
1 large or 2 medium jicamas peeled, fine julienne |
1 medium jar roasted red peppers, julienned |
5 -6 granny smith apples peeled, cored, sliced and julienned |
Directions:
1. Combine the Apple Juice, Vinegar, Chili Powder, in a mixing bowl and whisk untill well combined. 2. Combine the julienned jicama, onion, red peppers and apples and toss well in the dressing 3. Refrigerate at least one hour. |
