I recently was given The Official Vermont Maple Cookbook 3rd edition and this recipe is in that booklet. Very nice flavor and very easy to make. Ingredients:
1 1/4 cups flour |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon salt |
1 cup granola cereal |
1 cup diced apple |
2/3 cup maple syrup |
1 egg |
1 cup applesauce |
1/2 cup melted butter |
1 cup granola cereal |
2 tablespoons melted butter |
2 tablespoons maple syrup |
4 tablespoons sugar |
Directions:
1. Combine the first 6 ingredients in a large bowl. Combine the next 4 ingredients in a separate bowl. Fold the wet ingredients into the dry ingredients. Place batter in a prepared loaf pan. Combine topping ingredients and sprinkle on top of loaf. Bake at 350 for about 1 hour. |
