8 oz (1 cup) frozen apple juice concentrate, thawed |
1/3 cup equal sugar lite |
2 tsp cornstarch |
1 tsp butter |
1 tsp maple extract |
1 tsp vanilla extract |
2 lb sweetpotatoes, peeled, boiled, cut into 1-inch cubes, kept warm |
Directions:
1. Combine apple juice concentrate, Equal® Sugar Lite and cornstarch in small saucepan. Bring to boil over medium heat, stirring constantly. Boil and stir 2 minutes or until thickened and bubbly. Remove from heat. Stir in butter and flavorings until blended. 2. Pour glaze over sweet potatoes in serving bowl; toss gently to coat. |
