APPLE GLAZED BABY CARROTS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gee Estate in Quinlan, Texas in 1994. Ingredients:
3 cups baby carrots |
1 tablespoon lemon juice |
1 tablespoon butter |
3 tablespoons apple juice concentrate |
2/3 cup chicken broth |
1 teaspoon cinnamon |
2 teaspoons cornstarch |
1 teaspoon water |
Directions:
1. In steamer over 2” of boiling water steam carrots covered for 3 minutes. 2. Sprinkle with lemon juice then melt butter in medium skillet over medium heat. 3. Add apple juice concentrate and cook until it melts then add broth and cinnamon. 4. Bring to a boil then mix together cornstarch with water. 5. Add to skillet then lower heat and cook until thickened. 6. Add carrots and toss well to coat. |
