Coffee cake with a twist. This is one of the easier cakes I've ever made. A recipe of my late grandmothers. You can omit the pecans if you'd like. Great for company. Ingredients:
1/2 cup butter, room temperature |
1 1/4 cups sugar, divided |
1/2 cup brown sugar |
2 eggs |
8 ounces sour cream |
2 1/2 cups flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 teaspoon vanilla |
1 cup finely peeled and chopped apples |
1/4 teaspoon cinnamon |
1/2 cup chopped pecans |
Directions:
1. In a mixing bowl, cream together butter, 1 cup sugar and brown sugar. 2. Beat in eggs. 3. Add sour cream. 4. Sift dry ingredients into mixture. 5. Add vanilla. 6. Beat for 3 minutes with an electric mixture. 7. In a seperate bowl, mix and toss apples, cinnamon, 1/4 cup sugar and pecans (if using). 8. Into a greased 9x13-inch pan, pour half the batter. 9. Layer apple mixture over the batter. 10. Pour remaining batter over top. 11. Spread evenly. 12. Bake at 350 degrees for 45-50 minutes. 13. Sit with friends and a good cup of joe and enjoy!!!! |
