Ingredients:
nanny and nanny's apple dumplings
syrup
1 1/2 cups granulated sugar
1/8 teaspoon ground nutmeg
1 1/2 cups water
6 drops red food coloring
1/2 teaspoon ground cinnamon
3 tablespoons butter
pastry
2 cups sifted all-purpose flour
2/3 cup shortening
2 teaspoons baking powder
1/2 cup milk
1 teaspoon salt
apples
6 pie-making apples (the sourer, the better)
2 teaspoons ground nutmeg
6 teaspoons granulated sugar
6 tablespoons butter
1 tablespoon ground cinnamon
Directions:
1. ) Preheat oven to 375 degrees.
2. 2) In a medium saucepan and over medium heat, combine 1 1/2
3. cups sugar, water, 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg,
4. and the food coloring. Bring to a boil, remove from heat and
5. stir in 3 Tablespoons butter. Set aside.
6. 3) In a large bowl, combine flour, baking powder and salt.
7. Cut in shortening, using knives or pastry blender, until mixture
8. resembles coarse crumbs. Pour in milk, all at once, and stir to
9. form a dough. on a floured surface, roll dough into a 1/4 inch
10. thick, 12 x 18 rectangle. Cut into 6 - 6 squares.
11. 4) Peel and core apples. Place each apple in the center of
12. each pastry square. Dust each apple with a mixture of the
13. sugar, cinnamon and nutmeg. Dot with a tablespoon of butter.
14. Moisten the edges of the pastry square, bring the corners
15. together at the top of the apple, and press edges together to
16. seal. Place dumplings l apart on a baking sheet. Brush a
17. mixture of melted butter and cinnamon-sugar on each dumpling.
18. 5) Pour the syrup over the dumplings and sprinkle with
19. additional sugar, if desired.
20. 6) Bake in preheated oven for 35 minutes, until apples are
21. tender.
