If you don't have currants, you can substitute chopped raisins. Ingredients:
1 cup all-purpose flour |
1 teaspoon ground cinnamon |
3/4 teaspoon baking powder |
1/4 teaspoon baking soda |
1/4 teaspoon salt |
1/4 teaspoon ground nutmeg |
1/3 cup margarine |
3/4 cup firmly packed dark brown sugar |
1 large egg |
1 teaspoon vanilla extract |
1 cup diced peeled rome apple |
3/4 cup regular oats, uncooked |
1/2 cup dried currants |
cooking spray |
1 tablespoon powdered sugar |
Directions:
1. Preheat oven to 350°. 2. Combine first 6 ingredients. Stir well; set aside. 3. Cream margarine in a large bowl; gradually add brown sugar, beating at medium speed of a mixer until light and fluffy. Add egg; beat well. Add flour mixture to creamed mixture; beat just until dry ingredients are moist. Stir in vanilla, apple, oats, and currants. 4. Spoon batter into a 9-inch square baking pan coated with cooking spray. 5. Bake at 350° for 40 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack. Sprinkle powdered sugar over top. |
