2 cups grated apples, skin on |

1/3 cup margarine |
2/3 cup applesauce |
2 teaspoons cinnamon |
1 teaspoon ground ginger |
3 cups whole wheat flour |
1/2 cup rolled oats |
2 teaspoons baking soda |
Directions:
1. Preheat oven to 350F and line muffin tin with cupcake papers. 2. Put the first seven ingredients into a large saucepan and bring to a boil. 3. Cool, add flour and soda. 4. Fill paper lined cupcake tins 2/3 full and bake until cupcakes spring back when touched in the center |
