Apple Candy Ingredients:
3 cups sugar |
1/4 cup white syrup |
1&1/2 cups water |
1/4 teaspoon salt |
apples(cooking apples) |
Directions:
1. Pare,core and quarter the apples 2. Cut each quarter into 3 pieces 3. Mix sugar,water,syrup and salt in heavy saucepan 4. Bring to boil over medium heat 5. Stirring to dissolve sugar 6. Add Apples slices-as many as the syrup will cover- 7. Boil until slices are transparent 8. Remove the apples from syrup and drain on racks for 24 hours 9. Roll in granulated sugar and replace on racks 10. Roll again at intervals of 24 hours. 11. After the third rolling let crystals stand in the open air until no 12. more moisture exudes from them. 13. Pack in flat container-do not cover- 14. The crystals are an amber color |
