APPLE CRUNCH MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Skillman Estate in McKinney Texas in 1991. Ingredients:
1-1/2 cups unbleached sifted flour |
1/2 cup granulated sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
1-1/2 teaspoons ground cinnamon |
1/4 cup vegetable shortening |
1 large egg slightly beaten |
1/2 cup milk |
1 cup tart apples peeled cored and grated |
topping |
1/4 cup brown sugar |
1/4 cup chopped pecans |
1/2 teaspoon ground cinnamon |
Directions:
1. Sift together flour, sugar, baking powder, salt and cinnamon into mixing bowl. 2. Cut in shortening with pastry blender until fine crumbs form. 3. Combine egg and milk then add to dry ingredients all at once stirring just enough to moisten. 4. Stir in apples then spoon batter into paper lined muffin pan cups filling 2/3 full. 5. Combine topping ingredients then sprinkle over muffins. 6. Bake at 375 for 25 minutes then serve hot with butter and jam. |
