Apple crumble and cheesecake unite in this heavenly square - what a decadent way to go - another great recipe from Eagle Brand!! Ingredients:
1 1/2 cups all-purpose flour |
1 cup quick-cooking oats |
1/2 cup white sugar |
1/4 cup brown sugar |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 cup butter |
8 cups apples, peeled, cored and thinly sliced (golden delicious, northern spy, or cortland) |
1 1/2 teaspoons lemon juice |
1/2 cup water |
1/2 cup white sugar |
1/4 cup brown sugar |
3 tablespoons cornstarch |
1 1/2 teaspoons cinnamon |
1/2 teaspoon salt |
1/3 teaspoon nutmeg |
1 (300 ml) can eagle brand sweetened condensed milk |
1 (225 g) package cream cheese |
1 teaspoon vanilla |
2 eggs |
2 tablespoons all-purpose flour |
2 teaspoons lemon juice |
Directions:
1. CRUST:. 2. Pulse all ingredients together except butter in food processor. Add butter and pulse until mixture resembles coarse meal. Reserve 1 1/2 cups for topping. Press remaining filling into parchment lined 13x9 inch baking pan. Bake in preheated 350F oven for 10 minutes. 3. FILLING: 4. Toss apples with lemon juice. Combine with remaining apple layer ingredients in large saucepan and bring to a boil, stirring occasionally. Reduce heat to medium low and cook until apples are tender (about 5 minutes). Cool completely. 5. CREAM CHEESE LAYER: Beat all ingredients together with electric mixer or food processor until smooth. 6. ASSSEMBLE AND BAKE: 7. Pour cream cheese layer over pre-baked crust. Top with apples. Sprinkle reserved crust ingredients over apples and bake for 40 minutes or until set. Cool. Cut into squares. |
