This is adapted form a local grocery store brochure. A nice autumny breakfast cake. Ingredients:
3 cups flour |
1 1/2 cups sugar |
1/2 cup light brown sugar |
1 tablespoon baking powder |
1/2 teaspoon salt |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground nutmeg |
1/4 teaspoon ground ginger |
1/4 teaspoon baking soda |
4 eggs, lightly beaten |
1 1/4 cups mayonnaise (do not use reduced fat or fat free) |
1 teaspoon vanilla extract |
1 large tart apple, peeled and finely chopped |
1 cup flour |

Directions:
1. Preheat oven to 350. Grease a 13 x 9 baking pan; set aside. 2. Cake:. 3. In a large mixing bowl, combine flour, sugar, brown sugar, baking powder, salt, cinnamon, nutmeg, ginger and baking soda; set aside. 4. In a seperate mixing bowl, whisk together eggs, mayonnaise and vanilla until well-blended and smooth. 5. Mix chopped apples into the flour mixture; then stir in the egg/mayo/vanilla mixture. Stir until well-combined. The batter will be stiff. Evenly spread dough into prepared 13 x 9 pan. 6. Crumb Topping:. 7. In a mixing bowl, combine all crumb topping ingredients and mix well to form course crumbs. Sprinkle crumbs over batter in pan. 8. Bake at 350 for 50 minutes or until a toothpick inserted in the center comes out clean and crumb topping is golden. 9. Cool in pan on wire rack. Serve warm or at room temperature. |
