This is from the Cooking for Friends section that was in a June 1987 issue of Bon Appetit. It's quick and easy to make and is delicious with a scoop of homemade vanilla on the side! Ingredients:
1 cup sugar |
1 teaspoon cinnamon |
6 cups peeled cored and thinly sliced tart apples (about 5 large) |
1/2 cup raisins |
1 1/2 tablespoons fresh lemon juice |
1/2 cup all-purpose flour |
1/4 cup unsalted butter, cut into pieces (1/2 stick) |
1 cup chopped pecans |
Directions:
1. Preheat oven to 350 degrees. 2. Butter 11-inch round pie pan. 3. Combine 1/2 cup sugar and cinnamon in large bowl. 4. Mix in apples, raisins and lemon juice; transfer to prepared pie pan. 5. Combine flour and remaining 1/2 cup sugar in medium bowl. 6. Cut in butter until mixture resembles fine meal; stir in pecans. 7. Sprinkle over apples in pan. 8. Bake until apples are tender and topping is browned, 50 minutes. 9. Serve warm with ice cream or creme fraiche. |
