This is an incredible recipe. It is fantastic and loaded with cream cheese and apple flavors. I make these every year for my cookie exchange and everyone always asks for the recipe. Hope you enjoy as much as I do.
Ingredients:
2-1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup dark brown sugar firmly packed
1/2 cup granulated sugar
1 cup butter softened
2 large eggs
2 teaspoons pure vanilla extract

8 ounces cream cheese softened
1/4 cup granulated sugar
1/4 cup apple butter
Directions:
1. Mix flour, baking soda and salt.
2. In a separate large bowl blend brown sugar, sugar and butter with an electric mixer.
3. Add eggs and vanilla then beat at medium speed until light and fluffy.
4. Add flour mixture and blend at low speed until just combined but do not over mix.
5. Shape dough into marble size balls then place on ungreased cookie sheet 1 apart.
6. Bake at 300 for 10 minutes then transfer to a cool flat surface.
7. To make filling blend cream cheese and sugar on medium speed until fluffy.
8. Add apple butter and beat until smooth and thoroughly combined.
9. Spread 1 teaspoon of filling onto flat side of a cookie.
10. Top with another cookie to create a sandwich.
11. Repeat with remaining cookies and filling.
