Another recipe I saved from Yankee Magazine. I haven't made these yet but thought I'd share Ingredients:
2 1/2 cups flour |
1/2 tsp. baking soda |
1/4 tsp. salt |
1 cup dark brown sugar, firmly packed |
1/2 cup sugar |
1 cup butter, softened |
2 large eggs |
2 tsp. vanilla |
filling |
8 oz. cream cheese, softened |
1/4 cup sugar |
1/4 cup apple butter |
Directions:
1. Preheat oven to 300 2. In mixing bowl, sift flour, baking soda, and salt 3. In another mixing bowl, beat brown sugar, sugar, and butter on medium until combined 4. Add eggs and vanilla, and beat until light and fluffy 5. Add flour mixture and beat on low until just combined 6. Do not over mix 7. Shape dough into marble size balls 8. Place balls on ungreased cookie sheet, about 1 inch apart 9. Bake 10 minutes (do not let them brown) 10. Cool on cooling rack 11. Filling 12. Beat cream cheese and sugar on medium until fluffy 13. Add apple butter and beat until combined 14. Spread 1 tsp. of filling onto the flat side of a cookie 15. Top with another cookie 16. Repeat with remaining cookies and filling. 17. Note: Fill cookies just before serving |
