Apple Cranberry Walnut Muffins |

These are so good, especially when they are warm! Butter is always delish on them, and recently I tried cream cheese on them, and was pleasantly surprised! Don't wait until winter to try these! Ingredients:
1 1/2 cups flour |
1 teaspoon baking soda |
1 teaspoon cinnamon (or more) |
1/4 teaspoon salt |
2 eggs |
3/4 cup dark brown sugar, firmly packed |
1/4 cup vegetable oil |
1/4 cup sour cream |
1 teaspoon vanilla |
3/4 cup apple, unpeeled and diced |
3/4 cup cranberries |
1/2 cup walnuts, chopped |
Directions:
1. Mix flour, baking soda, cinnamon and salt in a large bowl. 2. In a separate bowl, whisk eggs, sugar, oil, sour cream and vanilla until smooth. 3. Stir in apple, cranberries and walnuts. 4. Fold into dry ingredients. 5. Bake at 350°F, for 20 to 25 minutes. |
