Ingredients:
1/4 cup brandy or apple juice |
1 cup dried cranberries |
2/3 cup sugar |
3 tablespoons all-purpose flour |
1/4 teaspoon ground allspice |
2 1/4 pounds granny smith apples, peeled and thinly sliced |
1 teaspoon vanilla extract |
1 (15-ounce) package refrigerated piecrusts |
vanilla ice cream (optional) |
Directions:
1. Microwave brandy or apple juice in a microwave-safe bowl at HIGH 30 seconds; stir in dried cranberries. Cover mixture, and let stand 10 minutes. 2. Combine sugar, flour, and allspice in a large bowl; stir in cranberry mixture, apple, and vanilla. 3. Stack piecrusts, gently pressing together. Fit pastry into a 9-inch pieplate according to package directions; flute edges. 4. Spoon apple-cranberry mixture into piecrust. 5. Bake at 375° for 1 hour, shielding edges of crust with aluminum foil after 30 minutes to prevent excessive browning. Cool pie on a wire rack 1 hour. Serve with vanilla ice cream, if desired. |
