A delightfully tasty, icebox cookie recipe with just 48 calories per cookie. Prepare the slice-and-bake dough over the weekend, then cut and bake when you’re ready for a quick homemade treat hot from the oven.
Ingredients:
1/4 cup light butter, softened (recipe actually calls for 50/50 butter blend, softened)
2/3 cup sugar
1 teaspoon vanilla
1/4 cup pasteurized liquid egg-whites, recipe calls for all whites 100% liquid egg whites
1 1/4 cups whole wheat flour
3/4 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/8 teaspoon salt
1/3 cup dried apple, finely chopped
1/3 cup dried cranberries
Directions:
1. In large bowl, beat together butter, sugar and vanilla until creamy. Beat in AllWhites. Add flour, cinnamon, baking soda and salt. Beat until well mixed. Stir in apples and cranberries.
2. On waxed paper, shape dough into about a 10-inch log. Wrap tightly in paper; freeze at least 3 hours or until firm.
3. Heat oven to 350°F With sharp knife cut log into 36 (1/4-inch) slices. Place 1-inch apart on ungreased cookie sheet. Bake 9 to 11 minutes or until cookies are a light golden brown. Remove from cookie sheet immediately; cool completely on wire rack.
