Jeremy had a pie-craving late one night. Any NORMAL person would maybe go buy a sick frozen dessert from the 7-11. Zoe, being the awesome girlfriend that she is, got baking. Ingredients:
***pastry |
1 1/2 cups plain flour |
3/4 cup wholemeal self-raising flour |
1/3 cup custard powder |
1/3 cup cornflour |
1 tbsp sugar |
1 egg yolk |
125g butter |
about 1/3 cup water (maybe more, maybe less..it was late okay ) |
***filling |
400g can pie apples (you couls substitute 2-3 real apples, peeled sliced and cooked if youre not making this at midnight haha..) |
1/4 cup craisins |
egg white to glaze |
raw sugar to sprinkle |
Directions:
1. For the pastry, Combine all the dry ingredients ina big bowl. 2. Rub in the butter. The mixture should look like breadcrumbs. 3. Add the egg yolk and enough water to bring it together to form a dough. 4. Wrap in plastic and leave in the fridge while you do the next few steps. 5. Combine the apples and craisins. 6. Preheat your oven to 190 celcius. 7. Line a pie pan with baking paper. 8. On a floured surface, roll out just over half of the dough, place in the bottom of the pie pan. 9. Spoon in the filling. 10. Roll out the rest of the pastry and place on top. Fold-over the edges of the pastry and press with a fork. 11. Paint the pie with the egg white and sprinkle with sugar. 12. Cut some little slits around the middle. 13. Bake for 20 minutes, then lower the temp to 180 celcius and bake 20 minutes more. 14. By this time its REALLY late, and parents are coming home drunk and demanding pie ...BUT ITS STILL BEATS THE HECK OUT OF A FROZEN ONE ! 15. OH and a pie-related question: WHY in some parts of america is apple pie served with cheese on top? im not knockin it, just curious... |
