This Couscous mixture makes a delicious healthy family dessert with a rich fruity flavor Ingredients:
2 1/2 cups apple juice |
2/3 cup couscous |
1/4 cup golden raisins |
1/2 tsp mixed spice |
1 large cooking apple, peeled cored, and sliced |
2 tbs light brown sugar |
plain yogurt to serve |
Directions:
1. Preheat oven to 400 2. place apple juice, couscous, raisins, and spice in a pan and bring to boil stirring occasionally 3. Cover ands simmer for 10-12 minutes until all free liquid is absorbed. 4. Spoon half the mixture into 5 cup ovenproof dish and top with half the apple slices. 5. Top with remaining couscous. 6. Arrange remaining apple slices overlapping the top and sprinkle with brown sugar 7. Bake for 25 minutes 8. Serve hot with yogurt |
