I found this recipe in the newspaper and added Granny Smith Apples to it and increased the raisin amount, mmmm comfort food. Ingredients:
2 cups sugar |
1 cup pecans |
1 tablespoon cinnamon |
1 cup raisins |
2 eggs |
1 cup sour cream |
1 tablespoon baking powder |
1 tablespoon baking soda |
1/2 teaspoon salt |
1 teaspoon vanilla |
1/2 cup soft margarine |
3 cups granny smith apples |
2 cups whole wheat flour |
1 (8 ounce) package cream cheese |
1/4 cup margarine |
2 teaspoons vanilla |
1 (1 lb) box confectioners' sugar |
Directions:
1. Cake:. 2. Cream together sugar, margarine, eggs, vanilla and sour cream. Add the apples, raisins and pecans mix together then add all the dry ingredients and mix well and pour int a tube or bundt pan and bake in a 350 oven for 50 minutes or until the knife test comes out clean. 3. Frosting:. 4. Cream together room temperature cream cheese and margarine, add vanilla and confectioners sugar mix and frost a cooled coffee cake. |
