Apple Cinnamon Whole Wheat Muffins |

Off the back of a bag of flour - waiting to try it! Ingredients:
1 cup all-purpose flour |
1 cup whole wheat flour |
1/2 cup sugar |
2 teaspoons baking soda |
2 teaspoons cinnamon |
1/2 teaspoon salt |
2 cups shredded apples |
1/2 cup shredded carrot |
1/2 cup raisins |
1/2 cup shredded coconut |
1/2 cup chopped walnuts |
1/4 cup oil |
1/4 cup unsweetened applesauce |
1/4 cup milk |
2 teaspoons vanilla extract |
2 eggs |
Directions:
1. Heat oven to 350 degrees. 2. Line 12 muffin cups or spray with nonstick spray. 3. Combine flours, sugar, baking soda, cinnamon, and salt in a bowl. 4. Add apples, carrots, raisins, walnuts and coconut, and mix well. 5. Add oil, milk, vanilla, and eggs. 6. Stir just until combined! 7. Fill muffin cups 3/4 full. 8. Bake 20-25 minutes or until they test done. |
