Apple Cinnamon Whole Wheat Muffins

Ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
2 cups shredded apples
1/2 cup shredded carrot
1/2 cup raisins
1/2 cup shredded coconut
1/2 cup chopped walnuts
1/4 cup oil
1/4 cup unsweetened applesauce
1/4 cup milk
2 teaspoons vanilla extract
2 eggs
Directions:
1. Heat oven to 350 degrees.
2. Line 12 muffin cups or spray with nonstick spray.
3. Combine flours, sugar, baking soda, cinnamon, and salt in a bowl.
4. Add apples, carrots, raisins, walnuts and coconut, and mix well.
5. Add oil, milk, vanilla, and eggs.
6. Stir just until combined!
7. Fill muffin cups 3/4 full.
8. Bake 20-25 minutes or until they test done.
