They are easy to make and taste good too. I served them at a coffee/breakfast meeting we had for a planning session for our summer reading program. Everybody liked them. We had both the powdered sugar sprinkle and the cool whip so that everybody could choose what they wanted. Can be made with 2 real eggs if you prefer them to the egg substitute.
Ingredients:
2 cups flour
2 cups brown sugar
1/2 cup margarine, softened
1 cup english walnuts, chopped
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup low-fat sour cream
1 teaspoon vanilla (you can use amaretto in place of vanilla if you like)
1/2 cup morning star farms better 'n egg (you can use real eggs if you prefer...2 eggs)
2 cups apples, peeled and finely chopped
Directions:
1. In large bowl combine flour, brown sugar, margarine and walnuts and mix well.
2. Press 2 3/4 c of the mixture firmly into an ungreased 9x13 pan.
3. Add remaining ingredients to mixture left in bowl and blend well.
4. Spread this mixture over what was pressed into the pan.
5. Bake at 350 for 40 minutes or until a toothpick inserted in center comes out clean. Serve warm sprinkled with powdered sugar or cool whip.(I used the french vanilla flavor of cool whip).
