Apple Cinnamon Quesadillas |

What a nummy treat !! Ingredients:
1 medium mcintosh apple, cored and chopped |
3/4 cup unsweetened applesauce (unsweetened) |
1/8 teaspoon cinnamon |
4 (6 inch) flour tortillas |
1/4 cup shredded low-fat cheddar cheese |
nonstick cooking spray |
1/2 cup nonfat vanilla yogurt or 1/2 cup low-fat yogurt |
2 tablespoons unsweetened applesauce |
1 dash cinnamon |
Directions:
1. Prepare dipping sauce;set aside. 2. Combine apple, applesauce and cinnamon in small bowl, mix well. 3. Spoon half the apple mixture on tortilla; sprinkle with half the cheese. 4. Top with another tortilla. 5. Repeat with remaining tortilla, apple mixture and cheese. 6. Spray large nonstick pan with spray; over medium heat till hot. 7. Cook quesadillas one at a time, about 2 minutes each side till golden brown. 8. Cut each quesadilla into four wedges. 9. Serve with dipping sauce. |
