Delicious and nutritious. Ingredients:
(1) 1 1/2 cups flour |
(2) 3/4 cup flaxseed meal |
(3) 3/4 cup wheat bran |
(4) 1 tsp baking soda |
(5) 1 tsp baking powder |
(6) 1/2 tsp salt |
(7) 3 1/2 tsp cinnamon |
(8) 1 1/3 tsp nutmeg |
(9) 1 cup brown sugar |
(10) 2 tsp vanilla |
(11) 1/2 cup honey |
(12) 4 tsp oil |
(13) 2 eggs, previously whisked |
(14) 1 cup milk |
(15) 2 apples, stripped of skin and cut into small pieces |

Directions:
1. Preheat oven to 375-f 2. (bowl 1) add all dry ingredients in bowl (first eight listed) 3. (bowl 2) whisk egg 4. (bowl 3) add all moist ingredients (# 9-14) 5. add bowl 2 to bowl 3 6. add bowl 3 to bowl 1, stir with whisk until mixed well 7. (bowl 4) take apples and mash with masher, leave chunks 8. add bowl 4 to 1 9. bake for 15-20 minutes, or until fork comes out clear from center of muffin 10. before eating the muffin, i suggest cutting a horizonal slit into the middle of the muffin and squeezing honey into it. then there is honey in every bite. :) |
