1/4 cup brown sugar, packed |
1/4 cup old fashioned oats |
2 tablespoons walnuts, chopped |
1 tablespoon butter |
1 (15 1/3 ounce) box apple cinnamon muffin mix, recipe calls for betty crocker fiber one apple cinnamon muffin mix |
3/4 cup water |
2 tablespoons vegetable oil |
2 eggs |
1/4 cup powdered sugar |
1 teaspoon water |
Directions:
1. Heat oven to 400°F Spray bottom only of 9-inch round cake pan with cooking spray. In small bowl, mix all streusel ingredients except butter. Cut in butter with fork until mixture is crumbly; set aside. 2. In medium bowl, stir muffin mix, water, oil and eggs just until blended (batter may be lumpy). Spread in pan. Sprinkle with streusel. 3. Bake 24 to 28 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes. 4. In small bowl, mix glaze ingredients until smooth; drizzle over coffee cake. Serve warm or cooled. |
