I just fell onto this recipe from Eagle this morning and felt its worth. Plus, you have to admit, it's pretty...
Ingredients:
1/2 cup plus 1 tablespoon butter, softened and divided
1/4 cup firmly packed light brown sugar
1 cup all-purpose flour
1/4 cup quick-cooking oats
1/4 cup walnuts, finely chopped
1/2 teaspoon ground cinnamon
16 ounces cream cheese, room temperature
14 ounce can eagle brand sweetened condensed milk
3 large eggs
1/2 cup frozen apple juice concentrate, thawed
2 medium apples (your choice), cored and sliced
cinnamon apple glaze (recipe follows)
1/4 cup frozen apple juice concentrate, thawed
1 teaspoon cornstarch
1/4 teaspoon ground cinnamon
Directions:
1. Preheat oven to 300 degrees F.
2. Beat together 1/2 cup butter and sugar until fluffy.
3. Add flour, oats, walnuts and cinnamon.
4. Mix well.
5. Press firmly onto the bottom and a little up sides of a 9 springform pan.
6. Bake 10 minutes.
7. In large bowl, beat cream cheese until fluffy.
8. Gradually beat in the condensed milk until smooth.
9. Add eggs and apple juice concentrate.
10. Mix well.
11. Pour batter into prepared crust.
12. Bake for 45 minutes OR until center springs back when lightly touched.
13. Remove from oven.
14. Cool.
15. In a large skillet, cook apple slices in remaining 1 tablespoon of butter until tender-crisp.
16. Arrange apple slices on top of cheesecake in concentric circles.
17. Drizzle with Cinnamon Apple glaze.
18. Chill.
19. Store leftovers covered in refrigerator.
20. GLAZE:
21. In small saucepan, combine 1/4 cup frozen apple juice concentrate, 1 teaspoon cornstarch and 1/4 teaspoon cinnamon.
22. Mix well.
23. Cook over low heat, stirring, until thickened.
24. Makes about 1/4 cup.
