Apple Cinnamon Buttermilk Pancakes |

Cooking time will vary depending on the size of the pancake. Ingredients:
1 teaspoon baking soda |
2 cups flour |
2 teaspoons baking powder |
2 -3 tablespoons brown sugar |
1 teaspoon salt |
1 teaspoon ground cinnamon |
2 large eggs, beaten |
1 1/2 cups buttermilk |
1/2 cup sour cream |
1/4 cup butter or 1/4 cup margarine, melted |
1 large apple, peeled, cored and grated |
Directions:
1. In a large bowl, mix together the baking soda, flour, baking powder, brown sugar, salt and cinnamon. 2. In another bowl, whisk together the eggs, buttermilk, sour cream and melted butter; add to the flour mixture and stir JUST until the flour is moistened. 3. Stir in the grated apple. 4. Drop a scant 1/4 cup of batter onto a hot lightly greased griddle. 5. Cook, turning once until golden brown. |
