APPLE CIDER PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Delaney Estate in Waco, Texas in 1994. Ingredients:
1 cup granulated sugar |
1 cup apples cored and sliced |
1 cup apple cider |
1 teaspoon cornstarch |
1 tablespoon lemon juice |
1 teaspoon vanilla |
1 teaspoon margarine |
1 pie crust for a double layer pie |
1/2 teaspoon cinnamon |
Directions:
1. Combine sugar and cider in a sauce pan then bring to a boil and add apples. 2. Simmer stirring occasionally for 5 minutes then remove from stove. 3. Drain juice off to measure 1-1/2 cups. 4. If you do not have enough juice add some cider. 5. In a saucepan combine juice with cornstarch, lemon juice, vanilla and butter. 6. Bring to a boil and stir until it thickens and turns clear. 7. Sprinkle 1/4 teaspoon cinnamon over bottom crust then add drained apples and cider mixture. 8. Sprinkle with remaining cinnamon then top with pie crust and slash the crust. 9. Bake at 400 for 45 minutes. |
