These are really a small bundt cake. Good for breakfast. Not sure where I got this recipe but I like them especially in the fall. I use a pan that has four bundt style molds. Ingredients:
2 cups flour |
1 1/2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1/2 teaspoon salt |
2 teaspoons cinnamon |
1 egg, slightly beaten |
2/3 cup brown sugar |
1/2 cup apple butter |
1/3 cup maple syrup |
1/3 cup apple cider |
1/3 cup plain yogurt |
2 tablespoons canola oil |
Directions:
1. Preheat your oven 400 deg. 2. Coat molds with cooking spray. 3. In a bowl, blend together first 5 ingredients. 4. In another bowl, combine remaining ingredients and add dry ingredients. Stir until just blended. 5. Put 1/4 Cup dough into each of the four molds. 6. Bake 12 minutes. 7. Cool slightly and remove. 8. Clean and spray molds again and use the other half of the dough. 9. Bake 12 minutes. 10. Cool slightly and enjoy with coffee. |
