From a 1960s rural New Zealand cookbook, this is the recipe for apple cider. I haven't tried it yet as I am still collecting enough swing stoppered glass bottles to recycle for this recipe! Cook time is actually the standing time Ingredients:

                                                3 lbs apples |
                                                1 gallon boiling water |
                                                1 lb sugar |
                                                1 ounce raisins |

                    Directions:

                                1. Cut apples into pieces, skins and cores. 2. Add sugar and raisins. 3. Cover with boiling water. 4. Allow to stand for 4 days. 5. Strain and bottle. 6. Tie corks down! |
