Apple Cheddar Salad With Maple Dressing |

This is a Bonnie Stern recipe found in Readers Digest, with a bit of an adjustment. Ingredients:
8 cups washed dried and torn into bite sized pieces boston lettuce or 8 cups mixed greens |
1 cup walnuts or 1 cup pecan halves |
2 apples, cored and sliced |
4 ounces sharp cheddar cheese, shaved |
2 tablespoons apple cyder vinegar |
2 tablespoons maple syrup |
1/2 teaspoon salt |
1/2 teaspoon dijon mustard |
1/3 cup vegetable oil |
2 tablespoons maple syrup |
Directions:
1. In jar with tight fitting lid. 2. combine the dressing ingredients and shake well. 3. Set aside. 4. Preheat oven to 325 degrees. 5. On a parchment lined baking sheet. 6. spread out the nuts that were combined with the syrup. 7. Bake 15 minutes. 8. Cool. 9. To assemble:. 10. Toss salad greens of choice with as much of the dressing as you would like. 11. Devide onto 6-8 serving plates and top with apples, cheese and nuts. |
