Apple Cheddar Melts with Watercress |

These sandwiches make a savory lunch or, served with a bowl of soup, a perfect Sunday supper. We prefer Madras curry powder for this recipe because its subtle, sweet flavor complements the apple and cheese particularly well. Ingredients:
4 slices whole-wheat bread, lightly toasted |
2 tablespoons unsalted butter, softened |
1/2 teaspoon curry powder |
1 granny smith apple, halved, cored, and thinly sliced |
1 bunch watercress (8 ounces), trimmed and coarse stems discarded |
1/2 pound extra-sharp white cheddar, thinly sliced |
Directions:
1. Makes 2 servings. 2. Preheat broiler. 3. Arrange toasts in 1 layer in a shallow baking pan. Mash together butter and curry powder and spread on toasts. Arrange apple on toasts, then top with watercress and cover evenly with cheese. (Tuck watercress under cheese to prevent it from burning.) 4. Broil sandwiches about 6 inches from heat until cheese is melted and lightly browned, 3 to 5 minutes. |
