Apple Carrot and Yogurt Salad |

The yogurt in this tasty, creamy dish brings out the natural sweetness of the apples. Ingredients:
2/3 cup carrot, shredded |
1 small granny smith apple, diced |
100 ml fat-free lemon yogurt |
1/2 teaspoon dijon mustard |
1 pinch brown sugar |
1 teaspoon lemon juice |
2 teaspoons orange juice |
ground black pepper (to taste) |
Directions:
1. Combine the carrots and apple in a bowl. 2. In a seperate bowl, combine and whip the yogurt, mustard, sugar, lemon juice and orange juice. 3. Add dressing to the salad and mix well. 4. Season with black pepper. 5. Enjoy! |
