Apple Carrot and Raisin Salad |

This light and fresh salad makes a nice sweet side to any poultry dish, such as grilled chicken or turkey. Ingredients:
2 carrots, shredded |
1 apple, julienned (preferably pink lady or ambrosia) |
2 -3 tablespoons raisins (or a combination) or 2 -3 tablespoons sultanas (or a combination) or 2 -3 tablespoons craisins (or a combination) |
1 teaspoon cinnamon honey |
1 teaspoon lemon juice |
2 teaspoons citrus peppercorn vinaigrette dressing |
Directions:
1. Combine the first three ingredients in a serving bowl and toss to combine. 2. Whisk together remaining ingredients and pour over salad; toss to coat. 3. Enjoy! |
