A really great cheesecake for the fall. Using canned apples(Lucky Leaf) makes this really easy and delicious! Ingredients:
1 cup shortbread or gram crackers crushed |
1/2 cup sugar |
1/3 cup melted margarine |
2 (8 oz) packages cream cheese, softened |
2 eggs |
1 teaspoon vanilla |
1/2 cup sugar |
1 can apples (i use lucky leaf)or apple pie filling |
1/3 cup sugar |
1 teaspoon cinnamon |
1 cup chopped pecans |
caramel topping(icecream topping in a jar) |
whipped cream |
Directions:
1. preheat oven to 350 2. Mix together the crumbs, sugar, and butter. 3. Press into the bottom of a spring form pan 4. bake 10 minutes 5. Remove from oven, 6. In a med. mixing bowl, mix together the cream cheese, vanilla, sugar. 7. Add one egg at a time and mix well. 8. Pour over crumb crust, 9. Mix together the apples, sugar, cinnamon and pecans. 10. Spoon over cream cheese filling and bake in 350 oven for 1 hour. 11. Turn off oven and let the cheesecake sit in oven for an additional 5 minutes. 12. Remove from oven, let cool and refrigerate until ready to serve. 13. When ready to serve, slice cheesecake and place on serving plate. 14. Drizzle a spoonful of the caramel topping over cheesecake. 15. Top with a little whipped cream. 16. Serve |
