Apple Cake With Warm Caramel Pecan Sauce |

I just tried this and thought I'd share. The sauce takes this over the top. Ingredients:
1 cup butter |
1 cup sugar |
2 eggs |
1 1/2 cups flour |
1/2 teaspoon nutmeg |
1 teaspoon baking soda |
1/4 teaspoon salt |
1 teaspoon vanilla |
3 medium tart apples, peeled and finely chopped |
3/4 cup pecans, chopped |
4 tablespoons butter |
1/2 cup pecans, chopped |
1 cup brown sugar |
1 cup whipping cream |
Directions:
1. Cream butter and sugar and add eggs. Add flour, spices, soda, salt and vanilla. 2. Mix for one minute. Mix in apples and nuts. 3. Pour into a 9-inch spare pan and bake for 40-45 min at 350*. 4. For Sauce:. 5. Melt butter in saucepan; add nuts and cook, stirring over medium-high heat until toasted, about 3 minute. 6. Add brown sugar and cream and cook, stirring, until sauce boils. 7. Can be stored in the refrigerator for several days. |
