An unusual and simple cake that uses a can of apple pie filling. Obtained this recipe from Bon Appetit Magazine April 1980. Ingredients:
1 (16 ounce) can apple pie filling |
2 cups sugar |
1/2 cup vegetable oil |
2 eggs |
2 cups flour |
2 teaspoons cinnamon |
2 teaspoons baking soda |
1 teaspoon salt |
1 cup confectioners' sugar |
1 (3 ounce) package cream cheese, room temperature |
1/4 cup butter, room temperature |
1 teaspoon vanilla extract |
Directions:
1. CAKE: Preheat oven to 350 degrees F. 2. Butter a 9 x 13-inch baking pan. 3. In a small bowl, combine flour, cinnamon, baking soda, and salt. 4. In a large bowl, combine apple pie filling, sugar, vegetable oil, and eggs; mix well. 5. Add flour mixture; mix well. 6. Turn batter into prepared pan. 7. Bake for 1 hour. 8. Cool. 9. FROSTING: Combine cream cheese and butter; cream well. 10. Add powdered sugar and vanilla extract; mix well. 11. Frost top of cake. |
