This is delicious served warm and it is as good cold, right out of the fridge. Even if you're not Jewish you may want to try this. It tastes like an apple bread pudding. Ingredients:
6 eggs, beaten very well then add to |
1-1/2 cups matzoh cake meal |
2 cups sugar |
3/4 cup oil |
and mix the above thoroughly |
5 apples (roma, spy, royal gala or any baking apples) peel and slice thinly |
1 cup chopped walnuts |
1 cup golden raisins |
1/4 cup sugar mixed with 1 tsp. cinnamon |
Directions:
1. Generously grease a 13 x 9 in Pyrex. 2. Fit waxed paper in pan, and then turn paper over so that both sides are greased. 3. Pour 1/2 batter into pan. 4. Top with 1/2 of the apples, 1/2 of the nuts and 1/2 of the sugar/cinnamon. Repeat. 5. Bake at 350 for 1 hour. 6. Let cool on rack. 7. Turn out so that you can remove the waxed paper and then put back into pan. 8. Refrigerate after using. |
