Wonderful moist cake, made with apples straight from the orchard. I usually use Jonathan's or Grimes Golden, but these are hard to find.
Ingredients:
2 eggs
2 cups sugar
1/2 cup vegetable oil
2 cups all-purpose flour
4 cups diced apples
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 cup brown sugar
1/2 cup white sugar
1 cup water or 1 cup apple juice
1 teaspoon vanilla
1/4 cup butter
Directions:
1. Beat eggs until fluffy and light.
2. Gradually add sugar, oil and vanilla.
3. Sift together flour, nutmeg, cinnamon, salt, and soda.
4. Stir in apples.
5. Bake at 350 degrees for 45 minutes.
6. Make topping: Mix sugars and water in pan bring to boil.
7. Boil til clear.
8. Add vanilla.
9. Finish with butter.
10. Pour over warm cake.
