My mother's recipe for apple cake: light, tasty, great for dessert or breakfast. Ingredients:
4-6 apples (4 large apples, 5 med., 6 small) |
2 eggs |
2 c. sugar |
2 tsp. cinnamon |
1 c. vegetable oil |
2 2/3 c. flour |
2 tsp. baking powder |
2 tsp. salt |
Directions:
1. Preheat oven to 350 degree. Oil and flour a rectangular baking pan or two square ones or a bundt mold. 2. Core, peel, and dice apples. 3. Mix apples in a large bowl with eggs, sugar, cinnamon, and oil. 4. In a smaller bowl, mix flour, baking powder, and salt. 5. Combine the bowls. 6. Pour into baking dishes. 7. Cook 50 minutes or until crush is golden brown and a fork inserted into the center comes out clean. 8. To make it extra sweet, frost with cream cheese icing. |
