This cake can be made according to the best fruits of the season, and by changing the ground spices to suit the fruit. Ingredients:
2 cups flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
100 g softened unsalted butter, cubed |
1/2 cup brown sugar |
1/2 cup milk |
2 tablespoons cider vinegar |
3 apples |
2 teaspoons lemon juice |
1/4 cup raisins |
1/4 teaspoon ground allspice |
1/4 teaspoon ground cloves |
1/4 teaspoon ground nutmeg |
1 tablespoon honey |
Directions:
1. Preheat oven to 350°F. 2. Add cider vinegar to milk. 3. Peel and chop apples. 4. Toss with lemon juice, raisins, spices, and honey. 5. Sift flour, baking powder, and soda. 6. Rub in butter until mealy. 7. Add sugar and milk mixture. 8. Knead dough, adding more flour if sticky. 9. Roll out half of dough to cover bottom of 8-inch square pie dish. 10. Spoon apple mixture over. 11. Roll out rest of dough to cover, and cut vents in top. 12. Bake for 45 minutes, or until top is browned. |
