APPLE BUTTERSCOTCH PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lewis Estate in Bedford, Texas in 1982. Ingredients:
5 cups thinly sliced peeled tart apples |
1 cup packed brown sugar |
1/4 cup water |
1 tablespoon lemon juice |
1/4 cup all purpose flour |
2 tablespoons granulated sugar |
3/4 teaspoon salt |
1 teaspoon vanilla |
3 tablespoons butter |
pastry for 9 pie |
Directions:
1. Preheat oven to 425. 2. Mix apples, brown sugar, water and lemon juice in 2 quart saucepan. 3. Heat to boiling then reduce heat and cover then simmer 8 minutes. 4. Mix flour, granulated sugar and salt then stir into apple mixture. 5. Cook stirring constantly until mixture thickens and boils. 6. Boil and stir 1 minute then remove from heat and stir in vanilla and butter then cool. 7. Turn apple mixture into pastry lined pie plate then cover with top crust that has slits cut in it. 8. Seal and flute then cover edge with 3 strip of foil to prevent excessive browning. 9. Bake 45 minutes removing foil during last 15 minutes of baking. |
