Scrumptious apple butter muffins. Everyone loved these muffins. They didn't stand a chance! Ingredients:
2 cups all-purpose flour |
2/3 cup brown sugar, packed |
1/4 cup granulated sugar |
2 tsp. baking powder |
1/2 tsp. baking soda |
1/2 tsp. salt |
2 tsp. cinnamon |
1/4 tsp. ground ginger |
1/2 cup chopped walnuts |
1/2 tsp ground cloves (added after the fact, not in original recipe ingredients) |
1 cup apple butter |
1/4 cup vegetable oil |
1/4 cup milk |
2 eggs |
Directions:
1. Preheat oven to 400 F. In a large bowl, combine the flour, brown sugar, granulated sugar, baking powder, baking soda, salt, cinnamon, ground cloves, ground ginger and walnuts. In another bowl combine the apple butter, oil, milk, and eggs and mix well. Pour the wet ingredients into the dry ingredients and combine just until moistened. 2. Spoon batter into 12 greased muffin cups and bake at 400 degrees F. for 18-22 minutes or until a toothpick inserted in the center comes out clean.
