I've recently started making this for breakfast. The kids also like to take slices to school for a snack. Goes great with a tall glass of cold milk. Ingredients:
2 cups self-rising flour |
1 cup sugar |
1 1/2 teaspoons ground cinnamon |
2 eggs |
1 cup butter or 1 cup margarine, melted |
3/4 cup apple butter |
2 tablespoons milk |
1/2 cup chopped pecans |
1/2 cup golden raisin |
Directions:
1. Combine flour, sugar, and cinnamon; set aside. 2. Combine eggs, butter, apple butter, and milk; beat well. 3. Stir in pecans and raisins. 4. Add flour mixture, stirring just until dry ingredients are moistened. 5. Spoon batter into a greased and floured 9- x 5- x 3-inch loafpan. 6. Bake at 350 degrees F. 7. for 65 minutes or until a wooden pick inserted in center comes out clean. 8. Cool in pan 10 minutes; remove to wire rack and cool completely. |
