From one of the many yahoo groups, not sure which .Yummy, sweet and fluffy. Use as muffins or bread . This batter is really thick, you might even think there is not enough batter to apples. Bake em, you won't be sorry. Ingredients:
1 1/2 teaspoons baking soda |
2 teaspoons cinnamon |
1 teaspoon salt |
1 cup granulated sugar |
1 cup brown sugar, packed |
1 cup vegetable oil |
3 eggs, lightly beaten |
2 teaspoons vanilla extract |
3 cups all-purpose flour |
1 cup walnuts, chopped (optional) |
3 cups apples, peeled and diced |
Directions:
1. Heat oven to 325°F. 2. Grease 2 loaf pans. 3. Electric hand mixer not recommended. 4. Workout those arms . LOL. 5. In a large bowl combine baking soda, cinnamon, salt, granulated sugar, packed brown sugar, and vegetable oil. 6. Add 3 eggs lightly beaten, 2 tsp vanilla, 3 cups flour, 1 cup walnuts (optional). 7. Fold in 3 cups peeled chopped apples ( I use Granny Smiths). 8. Pour into loaf pans or muffin tins and bake 60 to 70 minutes for loafs. Or 25 minutes for muffins . |
