this recipe makes either 6 or 9 bars depending on the size you cut them.. it also uses apple brandy... they do not freeze well and are best eaten on the day they are made... the recipe is from Wen Zientek Ingredients:

1/2 cup shortening |
1 teaspoon pure vanilla extract |
1/2 teaspoon pure almond extract |
1/4 cup sugar |
1 cup flour |
filling |
2 large eggs |
1 cup packed brown sugar |
2 teaspoons pure vanilla extract |
1/3 cup apple brandy |
1/3 cup flour |
1/2 teaspoon baking powder |
1/4 teaspoon salt |
1 cup chopped toasted almonds |
4 large apples, peeled, cored, and diced |
Directions:
1. 1. Preheat oven to 350 degrees and lightly grease a nine-inch square pan. 2. 2. Crust: Cream the shortening, extracts and sugar together in a small bowl. Add the one cup flour and mix well. Spread in the bottom of the prepared pan and bake for 15 minutes. 3. 3. Filling: In a large bowl, beat the eggs and brown sugar together until thick. Add the two teaspoons vanilla and brandy. Mix well until totally incorporated. 4. 4. In a small bowl, whisk together the flour, baking powder and salt. Slowly add the dry ingredients into the filling egg mixture, stirring well after each addition. Fold the walnuts and apples into the mixture. 5. 5. Spread the filling over the cooked crust and bake for 25-30 minutes, or until the filling is set. Cool in the pan and cut into bars.
