Adopted from Vegan Brunch. Ingredients:
1 cup natural applesauce |
1/4 cup unsweetened vanilla almond breeze |
1/2 teaspoon apple cider vinegar |
1/2 cup wheat bran |
3/4 cup whole wheat pastry flour |
1/4 cup stevia truvia |
1 tablespoon baking powder |
1/4 teaspoon salt |
1/2 teaspoon ground cinnamon |
1/2 teaspoon pumpkin pie spice |
Directions:
1. Preheat oven to 400 degrees. 2. MIx together applesauce, milk, vinegar, and wheat bran. 3. Separately, combine the flour, truvia, baking powder, salt, and spices. Make a well in the center and add the wet ingredients. 4. Fill 6 muffin tin spaces 3/4 of the way full. 5. Bake for 25 to 27 minutes, or until a toothpick inserted into the center of each muffin comes out clean. 6. Allow to cool, then serve warm. |
