Apple-Blueberry Corn Muffins |

A quick recipe using a mix that's really delish. This will give you 6 jumbo or 12 regular size muffins. Ingredients:
4 egg whites |
1 cup applesauce |
2 (8 1/2 ounce) packages corn muffin mix |
2 cups blueberries |
Directions:
1. Preheat oven to 375 degrees. 2. Grease muffin pan (including top of pan - these will be big muffins). 3. Mix egg, applesauce and muffin mix. 4. Stire in blueberries. 5. Spoon into muffin cups. 6. Bake for 20-25 minutes. |
